Knitty's Thuja (http://www.knitty.com/ISSUEwinter05/PATTthuja.html ) or Universal Toe Up Sock Formula (http://knitty.com/ISSUEsummer06/PATTuniversalsock.html ) would both fit (or be tailored especially to fit) a man. I used the toe up formula for my first socks and made them for my DBF. The only thing is you have to look into stretchy bind offs. Or, if you like the pattern you are using, you can use the sock formula to adjust to the proper number of stitches for you DH's foot. There are also several formula's available online for basic socks, but I dont know the URL's off hand. I like the sock formula's best, but I think thats because I am engineering minded -- I like to build things ;-P

Kazel: Thanks for the sock links. The other day, I swore I found a sock calculator for dummies and now I can't find it! So, you saved me some do-over searching. :)
